Staycation at MBS Part 2 - DB Bistro Moderne

NOTE #1:
This post is not suitable for my vegetarian friends and readers. Don't say I didn't warn you. ;P

My write-ups on restaurants are usually in a descriptive style of my personal experience and preference rather than how a food blogger does it.

Continuing from part 1 of our MBS staycation, we went window shopping at The Shoppes@MBS Singapore before heading down to DB Bistro Moderne for dinner. We badly needed to burn off all the food we ate before dinner but shopping doesn't seem to be a good workout.




DB Bistro Moderne is a celebrity chef restaurant by Daniel Boulud and this season, there is a brand new Oyster Bar with a plethora of seafood from all over the world.

I'm always intrigued by the variety of sauce available though I usually like to eat my food as their original flavour without any dips.




How adorable is this mini Tabasco sauce?




You know, we were totally not hungry from the Cocktail and Canapé Hour at The Club prior to this and I told myself, "No bread, no matter how delicious they are." I failed at this what you call a cheese bread or cheese puff.




I always say that you could tell how good a restaurant is from the bread they serve. I love good bread but I've to always stop myself from dedicating too much stomach space on bread.




There was a promotion for champagne which came in the form of Champagne Taittinger.




We ordered the smallest one-layer seafood platter which consisted of oysters, lobster, shrimps, clams, whelks, scampi, scallop ceviche.




I love the sweet, fresh and succulent lobster! Craving for some sweet lobster now!




The lobster was the star. Not that human behind.




The shrimps and scampi look sweet and red but looks are deceiving. I would very much prefer those steamed prawns at Chinese restaurants any time. Another favourite was the ceviche and the oysters of course.




We were pretty impressed by the seafood platter though I felt that the cheaper seafood platters at other seafood restaurants would do just as fine.




Check out the 3-layer seafood platter at the other table. I asked the staff if that was the biggest platter and nope, it wasn't. And and and, that guy whose face was blocked by the platter? He's so charming! I love his chiselled good looks and smile.




We also ordered The Original DB Burger to share -- the famous gourmet burger in town. It is a sirloin burger filled with creamy foie gras and braised short ribs served on a parmesan bun.



I'm not a gourmet burger person. To me, burgers are called burgers when they could be eaten with both hands. I don't like squishing thick gourmet burgers and struggling to eat them the way I usually do. So for thick burgers, I would use a fork and a knife to eat and I don't get the real kick from the amalgamation of flavours. On the other hand, kh is a gourmet burger person. I cannot stand it when he watches food channels on gourmet burgers and for the next few days, asks me if we could eat some thick burgers.




I love the taste of the sirloin and the parmesan bun. The creamy foie gras is stuffed in the sirloin. I personally prefer seared foie gras as opposed to pâté or creamy ones though for The Original DB Burger, the creamy one is a perfect blend.

Kh felt it was by far the best burger he had ever eaten. I have to admit that as much as I don't like burgers, DB Burger is really one of the better burgers around (Of course! That's their trademark and at SG$42 in full decadence, it had better be good!) If you are interested, watch the video on how the DB Burger is crafted.




How the husband eats VS How the wife eats

The man: Attempted at using fork and knife first, then decided on using both hands for the full flavour and ended off with sucking his fingers.

The lady: Fork and knife, fork and knife, "It's too difficult to eat and I'm too full can you help me to finish?"




We had complimentary warm madeleines from the restaurant with a special touch.




And when the hub started to do a mock clap, mouthing the word "Ha...", I told him, "No singing please. No singing."




I was so full by then but the madeleines were really good. There was a hint of lemon if I'm not wrong and I love that zesty freshness in a dessert.




The staff suggested ending the meal with apple crumble served with vanilla bean ice cream. When I thought that it would be great to try a French style home-made apple crumble, I hadn't expected a whole pan! Together with the complimentary madeleines, it was too much sweetness.




We had to pack the unfinished ones!




We decided to check out the pool before it closes to see if there was good photo opportunities but alas, no.




You know, I wonder how many people actually bother to read my long gibberish when I posted this photo on Instagram. I guess nobody read till the end to see the wry humour.

I was jolted back to reality .

The polka dot lady photobombed all my pics but not her fault. She was there first.




The main focus of this photo is the lady with fiery lens aviators taking loads of selfies with the flashlight on.

There were many ladies like her at the pool who kept on tilting their heads at all angles, trying to get the best shots. While they were at that, they tried placing their hands on their heads, their face, their necks and did duck face, Angelina Jolie's pouts, smiled all sorts of sweet smiles, coy smiles, don't-hate-me-coz-I'm-beautiful smiles and I-swear-I-wanna-punch-your-face smiles.

It was all very interesting to watch!




I love this deceptive mirror at the lift lobby. It made my stumpy legs look really lean. In fact, it seems like all the mirrors in MBS have that effect.




And then when we got back to the room, I was pleasantly surprised to see a cake on the dining table from MBS.




Too much sweetness!




In my previous post, I mentioned about how much time and effort I put into styling my much shorter hair and how unruly my hair got after one evening in a non-windy place to boot. Here goes... half the time I was sweeping curtain of hair off my left eye. Nice in photo, impractical in real life.




The hair simply started to curl in all directions and I kid myself saying "Never mind. That was the bed head look I was trying to achieve." At least they were not sticking outwards.




The effect of the overlapping images of the bed in the beautiful night city skyline was just a reflection from the window of the room.




But yeah, it was great watching movies in bed and drifting off to sleep to my favouritest cityscape.

    The seafood platter definitely looks like the highlight of the night, although I am tempted to see what the largest seafood platter looks like if that 3 levels platter wasn't the biggest *-*

  3. Oh man Jo! This was such a great post! You know I'm a foodie too and I LOVED seeing all that cold seafood and would kill to have a dinner there in the future! My boyfriend and I both love seafood and we both love foie gras and burgers and foie gras really do go well! I did laugh about your photos with the pool in the background at night! There's no way you are going to get the pool empty or mostly empty when it comes to MBS's infinity pool! The hotel is always at 100% capacity I believe and that pool surely is such a hot spot all day long! Oh and I can totally imagine people taking selfies EVERYWHERE at MBS!! I think you could probably loose count of all the people taking selfies in a day there! Hah!

    Totally will be looking out for your next post! (P.S. I did an internship as part of my culinary/F&B course at Sky on 57...I did the breakfast shift as well while I was!! HEHEHE. Can't wait to see what you picked out from the morning menu. I loved their french toast, oh the smell of the orange blossom water and their ramen and mee siam were really damn good!)

    As for mascaras, if you haven't tried them before, Kiss Me Heroine is my holy grail brand for mascaras...I've been using their long & curl and volume & curl formula mascaras for now almost 5 years straight...At first when it's new it's quite wet and you need to run the brush onto the inside of the mouth of the tube but after a few weeks, the formula is perfection and you really need an oil based remover to get every bit off!

    1. Hey Sharlynn, I used to whack the cold seafood section in buffet for years but in recent years, my tummy isn't too good and I also do not crave so much for cold seafood too. I prefer warm seafood like those in Chinese restaurant. That said, I welcome cold seafood like this every once in a while. You mentioned that you've been to DB before right? But I'm not sure if you've tried. Many people say that the DB Burger is a must-try yet there are a few saying it is not worth the hype. Not sure about you and your boy.

      This reminds me. I didn't take a pic of the breakfast menu at Sky on 57 that I don't think I can remember some of those dishes! Argh... I usually take pics of the menu so that I could write it on my blog. I didn't choose all those you mentioned. Hehehe... But I always love their broth stuff!

      I tried Kiss Me mascara but I do not suit this brand. I bought once and even though it is super super waterproof which is great for my oily lids, it didn't look very nice on my lashes. Like what you said, quite wet and it was very untidy on me. 5 years is long! That is definitely your Holy Grail! =)

  4. Tell me again how did you managed to eat so much and yet stay soooooo slim?! I wish I can afford to do the same, well, I could up to last year and this year my metabolism went kaput. I swear I gain weight just by looking at a glass of water. Haha! I love burgers but I don't think I've ever tried gourmet burgers and for $42 per burger, it better has gold in it. LOL!

    And you look fabulous with your shorter hair, Jo! I think your hair looks perfect and you're just being silly about it being everywhere other than where you want it to be.

    1. Hey Shireen, I know it is difficult to believe but I'm really not that slim actually. =D
      I used to be thin when I was young even though I ate a lot. My stomach was a bottomless pit and it helped coz I hate it when people say with condescending tone, "You're so skinny. Do you eat?" and then they totally shuddup when they see how much I eat. I've stopped eating my usual amount for the past few years because of gastrointestinal problems. Overall I still look slim but my tummy, arms and legs have cellulite and have become fatter and thicker than my body frame as I age and I haven't even given birth yet! I'm a fake... I edit my arms and legs at times. LOL! My good friends used to poke fun at my flabby arms and laugh together with me but now even my colleagues notice that my arms are really a lot thicker than my general slim frame. My body fat is 24.8% with >25% being overweight in body fat! I've started working out and having clean eats now and then as you can see and I feel fitter now. Hehe...

Seriously, Im so impressed by all the food (considering the previous cocktail) you and Kh have eaten, you have my huge respect!:P Btw, Bistro Moderne must be a really good restaurant, Im as you regarding the bread and the burgers (when I still eat them, till 2 years ago) so I get you. But what Ive really enjoyed is all the sweetness you got, mmm so scrumptious! How sweet you found also the final cake!     1. Hello Lilli, I'm glad that you're not offended and even felt famished reading my post! I remember you are a Pescatarian. =) Hahaha... I was sooooo full! In the past we could but now I couldn't even finish my half of the burger and had to give to kh and that made him so full too that we totally couldn't eat any more dessert. I love most of the bread that the restaurants and cafe in Italy served!

  6. Too much sweetness could be the title of any photo that features you :) I do like a fancy burger but I almost always eat them with silverware and lose the top bun. Cute shot where you are holding the lobster's whiskers. Chisled mystery guy and the polka dot princess would make a good couple. Your new hair is awfully lovely, dear. So glad you had a nice time at this cool locale. Always happy to see you relaxing.

I can't say that my creative process included such deep thinking but now I kind of wish it did...maybe it did on a subconscious level?this is going to be my story from now on and I'm going to stick with it:)


    the food in this post!! wow! I love and could eat anything that comes from the sea...there are some sea food I don't eat for health reasons, but I still love them all....I just love that sea food plate you ordered.....it looks so delicious!!! and that 3 store plate that those people had looks pretty awesome...too bad it blocked the cute guy:) However, I think I can kind of see that he has a cute smile.

    You know I share your opinion about burgers. If you can bite into them, they're not real burgers, just meat served with salad and bread on the side...right? This burger does look yummy (the meat part looks very well prepared) but as you say- at that price it better be!!!

    Those pics of you eating vs. husband eating really made me smile:)!!!!!!!

    you know I have the same problem with bread...all the restaurants here in Mostar have this crazy delicious bread!!!!!! it's insane how tasty it can be---I bake my own bread sometimes and it can be pretty good but never really on that level. I don't know their secret. Anyhow, sometimes I eat so much bread there is no place for anything else.

    Recently, I took some foreign friends for lunch in Split and the waiter brought bread before we even ordered...so my husband asked him how does he know we will eat bread...but we do eat a lot of bread in general, not just Croatians but people from our region.

    Anyhow, I ordered fish with vegetables for my friend and for myself. As I explained, if one comes to Croatia, especially the coastal part, you should order fish. You can have other stuff everywhere, but not this kind of fish. Because of the circulation system of the Adriatic sea (no personal thanks to us), the sea in Croatia is crystal clear...and the fish is so yummy.


    I tried opening this post on my cell but gave up because I wanted to see all the pics on the big screen....If I hadn't I would have missed out on naked people:) They're not really naked, right? it's the effect the water creates...I think (and hope) that was it.

    I did check out that photo on instagram (I realized a moment later that the text was posted also in the post but at least I saw other comments and I'm a curious cat sometimes that likes to read other people comments) and I thought your description was quite poetic but in the end also very funny......adorable polka dot lady:) and as you said- people watching can be quite fun.

      Oooh… I sometimes read too much into things and tend to be philosophical at times. I feel so honoured that you are gonna use my interpretation as your story for the heart necklace! I should be the one thanking you!

      Yes, the additional cake was in the room when we returned. When l made the hotel booking, he mentioned that it was for his wife’s birthday. I guess these are some small little touches that make their guests feel special. =)

      I’m not sure about your culture but I do know that in Italy, bread are tips. They do not have tipping culture as you would have already paid for the bread. Over here, bread would usually be served at some restaurants and for higher end restaurants, their bread can be simply delicious! It’s so cool that you bake your own bread. Home-baked bread smells heavenly. I try not to eat too much bread due to my gastrointestinal issues. I’m eliminating some food from my diet to see which is the trigger and I realised that on days when I eat bread, I would get bad tummy pain. You make me wanna go to Croatia to eat fish right now! I didn’t know about the freshness of fish at your area and it is always cool to learn new knowledge!

      Yes, the people are not really naked. It’s the refraction of water that made them seem so. I thought it was very funny until it became my turn to be in the water and I think I look weird too.

      I’m always very appreciative when people read my words even those nonsensical ones. Hahaha… I know what you mean, I sometimes love to read other people’s comments too coz I’m a curious cat that way.

    2. It could be possible that bread causes some of your gastro problems. Lots of people have wheat sensibility...or gluten intolerance....For me it is the other way around...I didn't use to eat a lot of bread (even if it is in our culture) but under the influence of my husband who eats bread with every meal I changed my habits too...Interesting thing is that when I have problems with my Chron disease (which is often) bread seems to be a good neutral choice...there were weeks sometimes when I couldn't eat anything but yogurt, olive oil and bread. I also figured out that eating a lot of bread prevents uncontrolled weight loss (that sometimes happens in my case)....but just like everything, it is about figuring out what works for somebody. I know bread isn't the most healthy thing to eat in big quantities. For some people it is necessarily to eliminate bread completely....for me the strangest thing was learning how not to eat a lot of fresh fruits...I adore fruit but I had to cut back on both fresh fruits and vegetables and that still feels so weird.

  14. Jo, I always love reading your posts... I can never get over the food... wow. I rarely if ever eat out at a restaurant here, I think it has been almost 5 years or more since I have been out... I really need to get out... haha

    That was funny about the thoughts of extra terrestrials... lol

    I have the same problem with my hair... I have to do a ton of styling, it will look great for a couple of hours and then it is going every which way, I usually just clip it back mid way throughout the day... I do like your shorter look though, it is cute <3

    1. Hey Launna, I think it is due to the size of our country. It seems like people who live in very large states and/or in the suburbs and/or in a little town don't eat out that often. Over here, we are such a small country that it only takes minutes to get to places with food. And for special occasions, the hubz and I simply love checking out new restaurants. My favourite is still my parents' cooking. So delicious and comforting.

  15. Happy belated birthday to you Jo! I don't think I would leave town either if I had such a cool place like the Marina Bay Sands to stay in. It was so incredibly sweet of your husband to book a long weekend there to celebrate your birthday you lucky lady! The views and your accommodations looked really stellar and you guys always seem to find tasty food wherever you go :) My interest was perked when I saw you dined at DB Bistro Moderne because we have one in NYC. We dined there some years ago and liked it but we haven't been back because there are simply too many places to try in our city. But we also did try the signature db burger at the time and to this day I don't think I've had another burger quite as decadent. Your KH and my husband could seriously bond over their love of gourmet burgers. He doesn't watch shows about them but If my husband had his way, he'd order the burger off the menu wherever we went. He never gets sick of them. Does yours? He doesn't necessarily need them to be thick but the type of meat is important. The madeleines they brought you along with dessert was such a lovely touch. I don't eat many sweets but madeleines are one of the few things I can't say no to. I love how they're just a bite and you were right about the lemon flavor - that's my fave part! That infinity pool is so iconic and I've seen on Pinterest as well as in editorials. I'm not really surprised so many people were gathered there given the spectacular views. I'm always fascinated by people who taken a million selfies of themselves maybe because it's something I rarely do. It seems way more prevalent in the Asian culture as well based on the tourists I see in NYC. I guess I'm just not that fascinated with myself in that way. I actually wait it out so I don't have people in my photos. The wind did a great job of styling your hair. It really looks so effortless and chic and if I haven't told you before I really love this cut on you!

    Thanks for taking the time to catch up with my posts dear friend! You're one of the few observant people to pick up on Rena and Ian being replica's of my husband and I :) I even try to dress them how we would dress. I'm planning to do a post with a little more history about them soon so I hope that will clear up some of your curiosity. Like you I honestly didn't really care for dolls before I got them and part of their appeal was how realistic they could appear in photos. I did spend quite a bit of money of clothes and accessories for them but I have sold off some of them when I'm done photographing them as well.

    I think Zhao Wei is still based in Mainland China but i wouldn't be surprised if she owned property in Singapore as well. I was just reading how she is a billionaire now thanks to some wise investments.

      Thank you for your birthday wishes. Hubz and I always like to check out restaurants on special occasions. You and your hub also always check out great restaurants. Always love to see your food posts. And if we ever meet up, we could go to some burger place and our hubz would bond over burgers like you said. Hehehe… I don’t think he gets sick of burgers. Ah yes, I read that the original DB comes from NYC. I actually didn’t know that madeleines are meant to be lemon-flavoured. I thought that are just mini cakes and so felt that the hint of lemon from DB was really a refreshing touch.
      Since the day we connected on our blogs, I knew that you are not a selfie person. I remember being so excited to see finally see your face (albeit not to full face) in one of your post. Lol… So to me, Rowena is always that little doll up there and hence I always have the impression that Ian and Rena are the minis of you and your hubz! I’m surprised that not many people made that relation coz to me, it seems really apparent. Maybe I read too much into things at times but am always glad that my reading too much have so far been right. I’m so intrigued by all the little apparels you get for Ian and Rena. So totally cute and now I know that you would sell some of them off after a photoshoot. I know this is an expensive hobby and you are really prudent in doing that. After all, no point keeping them right? The photos are good enough.
      PS: FB picked you out as somebody to add on FB. There was a period of time where FB synced with Instagram and all of a sudden I see many blog friends who are also Instagram friends being on the list of “People you may know”. Everyone started adding one another and now I’m so glad we are all connected on FB too. It’s really amazing coz now I know my blog friends on a deeper level since you know, all the social medium realms portray a different facet of an individual. I´m not vegetarian and all the food look so delicious the sea food look amazing *w* the most of time I leave your blog I´m hungry and that is not good because I already had my dinner.   17. I actually prefer to eat things with dipping sauces, for me it makes it taste so much better! Then again, I do have weird taste buds so... But what a feast you guys had. Gross for the seafood parts but the dessert and sweets, I was droooooling. I love Madeline's, I haven't had one in so long. My mum used to buy them all the time when I was younger. Though too much dessert can be a bit much. Especially after such a feast (oh and gourmet burgers, I am so down for them. They've become an obsession for me every time I'm with a certain friend. We always have burger cravings whenever we're around each other. Even though they're incredibly messy and hard to eat, the taste, THE TASTE Jo! Mmmmm). And then to get back to the room and find more cake. My stomach started churning for you and not in a good way either.

    1. I always enjoy reading what you say about food coz you always have a very different view with I quote you, your "weird taste buds". Now I know that you don't like seafood too. I was almost wondering what other food do you eat when I read your excitement about gourmet burgers and smiled a little smile to myself. I can never eat gourmet burgers with my hands and I feel that sort of robs the actual taste from me eating bits by bits from cutting. Hahaha... yeah it was really too much sweet stuff that night and I'm not a sweet person.

  22. What a wonderful couple you are, I always like seeing you together, smiling and having nice time together;) The restaurant itself looks amazing, the dishes which were served look super delicious and exotic!
    Do you consider yourself to be a real gourmet? I notice that you often try something really original and special:) I'm much more conservative in what I'm eating (I've got some problems with health, plus, I'm not eating meat of hot blooded animals), but it's always quite interesting to me to see what a new gastronomic delight you are showing today:)

    p.s. you were asking me about my haircolor, may I reply. In this post http://www.svetusvet.com/2015/06/slavonic_4.html you can see me trying toner for hair (special hair conditioner), so the color is quite different than in all other posts, because after that I've got my hair dyed at a salon.

    1. Hello Alexandra, I don't think I'm a true gourmet though hubz and I love to check out restaurants and fine dining ones for special occasions. While I love lots of types of food, my ultimate favourite is my parents' cooking. So simple and comforting. What are your health problems? Are you unable to break down the proteins in red meat? I've got gastrointestinal problems so I really tone down on my eating and I'm reducing certain food to see which is the one causing me problem.

      Thanx for settling my curiosity on your hair colour!

  23. Hahaha Jo you should warn us at the beginning. Please grab something to eat cos you're going to be very hungry when you have read the post :D Omg I can't believe how much you guys can eat and stay so skinny! What's your secret? I really love your shorter hairdo (I have to cut my hair too but I don't have the time right now). Maybe it's impractical but who cares when it looks amazing :D. I have to say I'm a burger person. Gourmet or not I loved them all. Sadly I can't eat them anymore.
    RYC: Glad you like the song :D You should really be careful with the gluten. It's pretty simple to check out if you're having an intolerance. Just stop to eat gluten for 3 weeks. Of you're feeling better after that you probably have it too. I can tell you it gets worse with time. I can recommened you these two books:
    "Wheat Belly" by William Davis and "Grain Brain" by David Perlmutter. Well of course it's not easy to stay away from gluten. It's everywhere. Even in soy sauce. I hope you don't have it too cos it sucks so much.
    P.s.: It was lovely that your hubby gave you the cake. I had no idea that he was a romantic.

    1. Hi Mira, Oh dear, it seems like I'm always making people very hungry. That's so bad of me. Thank you for all your recommendation and your concern about my gastrointestinal problem. It is very difficult to eliminate gluten here coz everything we eat have got gluten in it. =( I feel so sad for you that you can't eat so many stuff including your favourite gourmet burgers.

      On eating lots and staying skinny, lemme paste my long story here:
      I know it is difficult to believe but I'm really not that slim actually. =D
      I used to be thin when I was young even though I ate a lot. My stomach was a bottomless pit and it helped coz I hate it when people say with condescending tone, "You're so skinny. Do you eat?" and then they totally shuddup when they see how much I eat. I've stopped eating my usual amount for the past few years because of gastrointestinal problems. Overall I still look slim but my tummy, arms and legs have cellulite and have become fatter and thicker than my body frame as I age and I haven't even given birth yet! I'm a fake... I edit my arms and legs at times. LOL! My good friends used to poke fun at my flabby arms and laugh together with me but now even my colleagues notice that my arms are really a lot thicker than my general slim frame. My body fat is 24.8% with >25% being overweight in body fat! I've started working out and having clean eats now and then as you can see and I feel fitter now. Hehe...

Gosh, huge in comparison to what we have. Gorgeous lobster. I love burgers, but not super thick one's. I would have to eat it with knife and fork also. Your husband seemed to enjoy it.
